I have some recipes that call for sour cream, but sour cream isn't cheap in my place so I sometimes feel hesitant buying it. Another issue is that I am seldom able to consume the entire cup - a total waste of money! So I thought I should try to use sour cream alternatives that would yield the same result in baking, but use cheaper ingredients. I'd also like to try sour cream substitute on recipes that call for yogurt because the yogurt that I get in my local grocery stores contain gelatin and I *think* the gelatin is making my baked goods rubbery.

Simple milk tea recipe. Sugar free
Missing teh tarik, I made a cup of simple milk tea today. Not as good but it's alright.
Ingredients:
1 lipton yellow label tea bag
3/4 cup hot water ( try 1/2 cup for more tea flavor)
1/4 tsp stevia powder or more
Procedures:
Let tea bag steep in hot water for 3-5 minutes
Add milk and stevia then stir.

Low Carb Cloud Bread
Trying my best to avoid breads, I am taking note of this cloud bread recipe for future use. The recipe is titled "carb free cloud bread" but it has some carbs, actually, so I'm going to call it low carb cloud bread instead. I read that while it's fresh from the oven, it's like meringue in texture, but once cooled inside a sealed container, it turns "nice and chewy".

Low-Carb Flourless Chocolate and Oatmeal Cluster Cookies
Oatmeal is what I have almost everyday for breakfast. It provides my body energy and fiber, it's easy to prepare (instant ones), and it's so good when sweetened!
In attempt to divert from the usual oatmeal breakfast (in a bowl, with water and sweetener), I'll try making oatmeal cookies instead for breakfast. These cookies can even be made the day or night before, which saves more time in the morning. :) And of course they are good to eat at any time of the day too!

Low-carb almond flour snickerdoodle cookies recipe
Ingredients:
1/2 cup butter (1 stick) softened at room temperature or melted slightly in the microwave at lowest setting
1 1/2 cups almond flour or almond meal (almond flour gives a more finely-textured cookie)
3/4 cup granular Splenda or Stevia-in-the-Raw Granulated Sweetener (or sugar if you don't care about having low-sugar cookies)
1/4 cup brown sugar (or use 1/4 cup more granular Splenda or Stevia, or any proportions of sugar/Splenda/brown sugar you prefer to make 1 cup total sweetener)
1 egg
1/2 tsp. vanilla
1/4 tsp. baking soda

Banana Muffins with Chocolate Chips (Recipe)
I rarely make anything people like, to be honest, but my friends liked the banana muffins I made yesterday. The muffins were made as gift to a friend who was celebrating her birthday, but I brought a few extras for the others to taste. They said the banana flavor is very rich. I thought so too. The texture is soft, and has a rich buttery banana flavor.

Caramel Cream Frosting (Recipe) by Catzie
This is a modified version of the caramel filling I make for my banoffee pie. It is less sweet because I add cream and a pinch of salt, and to stabilize it I add gelatin powder.
Ingredients:
1/2 cup butter or margarine
1/2 cup brown sugar
400 ml condensed milk
250 ml chilled all purpose cream
1 tsp vanilla
a pinch of salt
10 grams gelatin powder
Melt butter and then add sugar. Stir until foamy.
Add condensed milk. Simmer 5 minutes then transfer to mixing bowl.
When it is cooled, mix in chilled cream, vanilla, and salt.
Dissolve gelatin powder in as little HOT water as possible and mix into caramel mixture.
Chill the caramel frosting "a bit" and then whip to achieve a lighter texture. I said "chill a bit" because if it is chilled for too long, the gelatin will solidify and you'll get uneven texture when you whip.
