Chocolate Mousse (Recipe)

Ingredients:

1 3/4 cups whipping cream (Note to self: or 1 1/2 cup plus 1/4 cup)
340 grams dark chocolate chips (340 grams)
6 tbsp strong coffee, liquid (6 tbsp)
1 tbsp dark rum (optional)
4 tbsp butter
1 tsp plain gelatin

Procedures:


  1. Chill bowl, beaters, and 1 1/2 cream
  2. Melt together the dark chocolate chips, coffee, dark rum (if using any), and butter. Remove from heat when there are still some chunks of chocolates. Stir occasionally until cooled just above body temperature.
  3. Pour 1/4 cup cream in saucepan. Bloom gelatin for 10 minutes, then carefully heat. Do not boil.
  4. Mix and stir gelatin mixture with chocolate when they both have the same temperature.
  5. Beat chilled cream until medium peaks. Stir 1/4 of whipped cream into chocolate mixture to lighten it. Fold the rest of the cream into chocolate mixture in two batches. Don't overwork the mousse.
Notes:
I don't have brewed coffee so I simply mix a teaspoon of instant coffee with 6 tbsp hot water.
